Rare Salmon Blinis with Whole Mustard Cream

Ingredients
- 2/3 cup plain flour
- 1/4 cup buckwheat flour
- 1 teaspoon dry yeast
- 1/2 cup milk
- 1/3 cup sour cream
- 1 x 59g free range egg separated
- 1/2 teaspoon salt
Cream
- 1/2 cup sour cream
- 2 tablespoons whole seed mustard
- 1 tablespoon lime juice
- 25 piece rare salmon
Directions
- Preheat an electric frypan to a medium heat.
- Combine flours and yeast and mix well.
- In a 1 litre jug, whisk the sour cream, milk and egg yolk together until combined. Allow to stand 30 minutes.
- In a separate glass bowl, whisk egg whites to soft peaks and stir through with salt.
- Spray the frypan with a small amount of canola oil spray and add 1 tablespoon sized quantities of batter 3cm apart. Allow to cook for 2 minutes on the first side, then flip onto the other side for a further 1 minute. Repeat until all batter has been made into blinis.
- In a bowl, combine the sour cream, mustard and lime juice. Add 1 teaspoon to each blini and top with a piece of salmon.
