      2 pizzas

    INGREDIENTS

    • 2 tbsp olive oil
    • 500g chicken thigh
    • 1 tbsp tomato paste
    • 2 tbsp bbq sauce
    • 1 clove garlic, minced
    • 100g baby tomatoes, halved
    • 200g pizza cheese, grated

    Dough

    • 185mls warm water
    • 30ml olive oil
    • ½ tsp sugar
    • ½ tsp salt
    • 300g bread flour
    • 1 tsp yeast

    DIRECTIONS

    1. To make the dough, place the water, olive oil, sugar, salt, flour and yeast into the bread maker tin and select the ‘DOUGH’ setting and allow to knead.
    2. Preheat a fan forced oven to 200C and line a pizza tray with baking paper.
    3. Remove the dough from the bread maker and knead on a lightly floured surface. Cut the dough ball in half and roll each one out to 25cm round.
    4. In a frypan, heat the oil over a medium heat and then sear the chicken until golden and just cooked through, approximately 4 minutes on each side. Allow to drain on paper towel and then thinly slice.
    5. In a bowl, combine the tomato paste, bbq sauce and garlic and spread onto each pizza base. Top with chicken, tomatoes and pizza cheese.
    6. Place into the oven for 20 minutes or until golden brown.
