Carrot, Cumin and Fetta Fritters

INGREDIENTS
- 1 brown onion, finely diced
- 2 cloves garlic, chopped
- 1 tsp sea salt
- 1 tbsp vegetable oil
- 200g carrot, grated
- 100g fetta, crumbled
- 1 egg
- 3 tbsp chopped coriander stalk
- 2 tbsp gluten free plain flour
- 1 tsp ground cumin
- ½ tsp ground white pepper
DIRECTIONS
- Saute the onion, garlic and salt in the oil until the onion is translucent and allow to cool.
- Mix together the carrot, onion mix, egg, coriander, fetta, flour, cumin and pepper and stir to combine.
- Pre-heat the KAMROOK Golden Pancake maker. Very lightly coat with baking spray and place ¼ cup of fritter mix into each pancake well, close and lock the lid. Cook for 3 minutes.
- Remove the carrot fritters using a silicon spatula, place onto a wire cooling rack and continue with the remainder of the fritter mixture.
- Serve.
