Ingredients
- 2 large potatoes grated, drained
- 3 tablespoons plain flour
- 3 x 59g free range eggs lightly whisked
- 1 small onion peeled, diced
- 2 clove garlic minced
- 2 sprigs thyme leaves only
- 1/2 cup olive oil
- 50 grams butter
Directions
- Place the potato, flour, eggs, onion, garlic and thyme into a bowl and stir until combined.
- In a frypan, heat the oil and butter over a medium heat and then add 2 tablespoon sized portions of potato mixture into rounded shapes, into the frypan. Cook for 3 minutes on each side or until golden brown.
- Drain on grease proof paper and serve immediately.
