Parsnip Soup

INGREDIENTS
- 1 tbsp olive oil
- 40g butter
- 1 clove garlic, thinly sliced
- 1 brown onion, diced
- 1 tsp flaked salt
- 600g parsnip, peeled, roughly diced
- 250ml milk
- 550ml vegetable stock
- 4 sprigs thyme
- ½ cup walnuts
- 1 tbsp honey
DIRECTIONS
- Place the olive oil, butter, garlic, onion, salt, parsnip, milk, stock and thyme into the soup maker jug.
- Place the soup maker blending lid on top and secure to the base.
- Select the ‘SMOOTH’ soup setting and then select the ‘START’ button.
- In a small frypan, heat the walnuts and honey over a medium heat, stirring constantly until golden brown and bubbling.
- Serve soup with walnuts.
