Cajun Spice Chicken with Southern Style Potato Salad

Ingredients
Cajun Spice Mix
- 3 tsp sea salt
- 2 tsp ground white pepper
- 2 tsp onion powder
- 1 tbsp garlic powder
- 1 tsp cayenne pepper
- 2 tsp dried oregano
- 2 tsp dried thyme
- 1 tbsp paprika
- ¼ tsp ground nutmeg
- ½ tsp salt
- Aioli and fresh lime serve
Chicken Pieces
- 4 x 200gm chicken breast, sliced into 2cm thick pieces (length ways)
- 1 tbsp oil
Potato Salad
- 1 kg sweet potato diced and roasted
- 500 g large washed potato diced and roasted
- 150 ml whole egg mayonnaise
- 1 celery stick sliced
- ½ red onion sliced
- 3 hardboiled eggs
- 3 rashes of bacon, grilled
- ¼ bnch parsley chopped
- ½ pnt cherry tomatoes
- 1 head baby coz
DIRECTIONS
Spice rub
- For spice rub, combine all ingredients together and store in an air tight container until ready to use.
Chicken
- Rub the spice mix over the chicken breast and allow to marinate for 30 minutes (optional)
- Using a Kambrook Banquet pan, turn on to high setting, place 1tbsp oil in the pan and allow to heat. Fry the chicken pieces for 3-5 minutes on each side until cooked.
Potato Salad
- Dice and roast the potato and sweet potato.
- Hard boil the eggs, peel and half
- Slice the bacon and fry in Kambrook Banquet frypan
- Half the cherry tomatoes, slice onions and celery, then mix together a bowl with the mayonnaise. Now add the cooked potatoes and sweet potatoes and combine
- Layer a bowl with lettuce leaves and place potatoes mixture into the prepared bowl. Garnish with sliced eggs, bacon and chopped parsley.
TIPS: For a slightly naughtier style of when cooking this chicken, follow step 1 as above. Then, make an egg wash with a few eggs and a little butter milk. Dip the chicken in the egg mix, then into seasoned flour. Deep fry for 4 min in oil at 180°.
Instead of using chicken breast try using thigh fillet or even chicken pieces on the bone.
ALTERNATE APPLIANCES: This recipe could easily be made using a Food Steamer or Deep Fryer.
